Current opportunities exist for processors and organised smallholder groups to work with like minded processors, distributors and buyers to produce premiummicro-lots of coffee using different processing techniques.
Processing: Experimentation, flexibility and attention to detail then is key to improving both the JBM brand and quality. This needs to be done within the framework of quality certification and control of JACRA to maintain overall standards but with sufficient flexibility to ensure innovation. This is partly through process method which has changed over time from primarily washed to a mixture of honey, anaerobic and natural. Current opportunities exist for processors and organised smallholder groups to work with like-minded processors, distributors and buyers to produce premium micro-lots of coffee using different processing techniques. All the major producers wet mill JBM which forms part of its flavour profile. Similar to varietals, pilots could be done of natural, honey and anaerobic processed coffee, cupped and tested in the market. JACRA would need to be part of the process to approve any deviation from JBM taste profile and agree how the brand can be extended to include premium options. JCGA are currently working with smallholder groups and individuals on fifteen micro-lots, focusing on higher quality and unique ‘Flavours of the Mountains’.
